RECIPE: Courgetti and Turkey Meatballs

Can you believe it? I'm making an actual meal. Not baking. Even my Mums shocked!

Today I'm showing you a recipe for one of my favourite dishes. Courgetti and turkey meatballs. It's so tasty and never leaves me bloated like pasta does. I was asked by a coeliac if I could feature a meal that has no gluten.

I even make the sauce myself as I find that many shop bought sauces have added sugar. I find it so unneeded. 

I'm sad housewife because a spirilizer has changed my life. I use it at least twice a week to make vegetable ribbons and spaghetti like vegetables

So here is what you'll need:

- Tomatoes
- Courgettes
- Red peppers
- Onions
- Turkey Mince

The first thing I do is make the courgetti. I use about three to serve me and Joey

Then on to the meatballs. I bake the meatballs before I mix it all together so I know they are properly cooked. All I use is salt, and a bit of cayenne pepper and roll them into balls.

Bake for 25mins

Then on to making the sauce!

I think tomato sauce tastes so much better roasted so put the tomatoes and peppers in the oven for 20 mins


Add onions then blitz in the food processor.

Once everything is done. It's time to stir fry it all together for 10 mins. Everything is heated through.
