RECIPE: Gluten Free Coconut Pancakes





I'm having a serious love affair with coconut recently. Mainly because when you buy a packet there is no such thing as small! Plus I really fancied pancakes for lunch and wanted a simple recipe teehee! This recipe makes the little american panackes


You will need:
115g Gluten Free Flour
3 teaspoons of maple syrup (plus however much you want as a topping)
25g coconut
1 egg
180ml mik
oil (for frying)


1. Simply add all the ingredients into a bowl and whisk together. Mix until its lump free and smooth.
2. Add oil to the heated pan 
3. Add about two tablespoons of batter into the pan and cook for about a minute or til you can see bubbles in the batter.
4. Flip over and cook for another minute
5. Serve and add as much maple syrup as you want.

I decided to use maple syrup instead of sugar as I find I use less of it and it's just as sweet. Hope you enjoy and send me links and photos of what your looks like!
